I started cooking healthy real food back in 2004 when my first two girls were very young. Can I just tell you how many health problems we resolved with this diet alone?! Autism, ADD, celiac disease, endometriosis, MTHFR, and gluten-intolerance—Wowza!
I gave myself a HUGE challenge, my friends: to recreate all my favorite recipes without gluten, dairy, or refined sugar. I even went on to remove grains as well, although you can still find a few classics made with rice or buckwheat.
In the last 10 years I’ve made yogurt, bread, lasagna, doughnuts, cheesecake, and more without gluten, grains, dairy, or refined sugar. I published two cookbooks, The Spunky Coconut Cookbook and The Spunky Coconut Grain-Free Baked Goods and Desserts which are now out of print. You can still get the contents of my first two cookbooks, plus tons of blog favorites right here in this eBook! Eeek!
All of the recipes are gluten-free, dairy-free, and refined sugar-free. Most are Paleo, and 120 of the recipes are egg-free!
