After years of research and experimentation, Kelly now creates gluten-free food so similar to conventional wheat/dairy/sugar recipes that no one feels deprived. Together, through diet and biomedical treatments, her family is overcoming celiac disease, gluten-intolerance, ADD, and autism with great success. Kelly has run TheSpunkyCoconut.com since 2008, and she has published four cookbooks.
Kelly's recipes and photography have been featured on TheBalancedPlatter.com, The Huffington Post, ElanasPantry.com, Living Without magazine, and Paleo Magazine. Her books are recommended by GenerationRescue.org. Kelly lives in southern California with her husband and three daughters.
