This recipe is sweetened only with dates. Plus it contains spinach (don’t tell them, they’ll never know) and gut-healing protein powder.
Spunky Coconut Shamrock Shake
4 soft pitted Medjool dates
1/2 cup unsweetened almond milk
1 can coconut full-fat milk
1 tsp vanilla extract
1/2 tsp mint extract
2 tablespoons protein powder (I used this one)
small handful of spinach (or more to color)
1. Add all of the ingredients to the blender and puree until smooth.
2. Pour into the ice cream machine and churn, per manufacturers instructions.
3. When the ice cream reaches soft-serve consistency, divide between two glasses. (pictured with cream from a can of separated coconut milk on top)
Note: If you double the recipe you may need to refrigerate the puree before putting it in your ice cream machine.
Makes 1 very large or 2 regular sized shakes.
