We just ate this Chicken Marbella and Twice-Baked Squash from Elana's new book, Paleo Cooking from Elana's Pantry. It is all gone :-) I have two things to say about these recipes:
1. They are really fast and easy to make.
2. They are crazy-good.
Easy and delish—so Elana.
The chicken is marinated and baked in olives, prunes, capers, garlic, oregano and more. My family was literally hovering around me as I took the photo above. They were chomping at the bit.
The gorgeous orange dish is the Twice-Baked Squash. It's sweetened with a little fresh orange juice and liquid stevia. Both of these recipes are so nice on the eyes, making me feel like we're getting a real treat when it's only just a Thursday afternoon. I can't wait to make more of Elana's recipes for my friends and family (but mainly just for me).
