Rich and Creamy Rice Shakes
Add to blender:
1 cup coconut milk (I always use canned)
4 pitted Medjool dates (soak first if they aren't soft)
1/2 cup rice pudding* (if you substitute regular rice you would probably need only 1/4 cup)
6 ice cubes
Puree till creamy and smooth.
Note: If you aren't using a Blendtec you may need more liquids.
*1 cup organic brown rice to 6 cups dairy-free milk, cooked in the crock pot until it's very mushy.

OMG, look at those little feet and head!!! (And the shake looks good, too). :D
Ah! So cute, that baby Ginger! I remember making smoothies when I was pregnant with my daughter and every time I turned on that immersion blender she'd jump and kick me! We may have to try these!
Looking good mama! When you make your rice pudding do you use coconut milk for the liquid or just water or what?
I have a blendtec too and was wondering what setting you used for this??
Kelly, I love that this is SO easy to make with very little ingredients. I also loved getting a peek of Ginger. :D Chaz jumped, too, when the blender went on. I think he was having flashbacks of our last blender. lol

Watching this video put a big smile on my face. :) I'm sorry that the blender woke Ginger up, but it was so great to see her beautiful face! <3 I'm definitely going to try this recipe in my blendtec ASAP.
Sounds yummy! Loved seeing your precious baby girl, so sweet :o) My baby girl is 7 months, seems like yesterday she was that tiny. Goes by way too fast, as you know!
Thanks guys!
I did the number two speed twice, and I just added that to the instructions :-)
Kelly, it was so nice to see you and the baby! She is adorable, and you look great! Thanks for the recipe, hope everyone continues to be healthy & well-rested!! :) (P.S. - So impressed that she continued sleeping through that!)
The recipe looked so good, I cooked the rice pudding overnight. Today was so cold, though, I just couldn't think of getting the ice cubes out. So I ate it warm, like porridge, with dates and coconut milk. It was very comforting. I'm keeping that as a winter recipe! Thanks. Cute Ginger. And your video was a great ad for the baby wrap.
MMMM! So good I'm going to try it. Thanks!
The recipe looks great, but I really loved witnessing the adoration you have for little Ginger. Thanks for a glimpse back into early-mommyhood.
I was thinking we might not see you for a while...and there you are! Glorious, with baby Ginger, and a delish smoothie too. Thanks for another great recipe. I tried this blending the dates and 1/4 cup cooked brown rice together first (to get it super smooth), then drizzled in the coconut milk.
Hi. Great website! We are GFCF too and do tons of coconut. Look forward to going through your recipes. Thanks!
You're recipes are fabulous! I love this shake...perfect for my morning snack. She is beautiful! Have a great weekend.
Did you use coconut milk in the pudding or just water? Did you cook on low for something like 6 hours?
Great, easy recipe! Ahh Ginger is so precious!
Thanks!
Sometimes I use a can of coconut milk plus water, and sometimes just water. I do 8 hours low.
Just found your blog while searching for gluten free recipes. We are GF,SF,CF,and DF - Gluten Free, Soy Free, Sugar Free, Corn Free and Dairy Free. After years of trying to find the cause of my son's headaches, the Lord led us to a dr who diagnosed the cause as food sensitivities.
We have been on this 'freeing' diet for 5 months and for the first time in 6 years, my son is almost headache free.
Thank you for the recipes! I will try the shake. (We use Trader Joes unsweetened coconut milk in the quart size.)
I love that you make videos with Ginger. I think so often people think there has to be "baby only" time and then "this is all the stuff I need to get done without baby" time and then they get intimidated, especially in the kitchen. You are living proof of a happy, integrated lifestyle! I love how important family and food are to people like you (and me) in this community.
Your daughter popping in towards the end of the video was too cute.
I'm adding this to my list of shakes to tryout but I'll sub brown rice for white rice.
Thanks!
