The Spunky Coconut Cookbook
Second Edition

I'm so excited to tell you that our second edition is available! My honey, the designer , re-designed our first cookbook to create a matching set of cookbooks (as you can see on the right hand side of my site). It includes all your favorite recipes from the first edition, plus a handful of new ones. I hope you enjoy the new look :-) XOXO, Kelly

Congratulations - it looks fantastic! We are such fans of your recipes, I have to ask...

Any thoughts on a white bean-based bread? My family is on the Specific Carbohydrate Diet and we are finding legal bread recipes to be, well, not good. (Grainless + no: quinoa, tapioca, gums, only dates and honey for sweetener, ahhhh!!!). Help?!

Thanks guys!

Jen, I have a few bean breads (plus bean scones and biscuits) in my baked goods & desserts cookbook, but they contain about 1/4 cup tapioca or arrowroot (per recipe), as well as 3/4 tsp guar gum. I think you could totally leave out the guar though.

I have your second book (thanks for letting me win it on your giveaway) and love it! I think it's really cool you rereleased your first book to now match the seconds style!! I can't wait to get your first book now, it's in my wish list :D

Thanks Kelly! I have that book so I will start there and maybe experiment with some SCD/GAPS legal substitutions. I will let you know if anything works out well enough to please my picky kids! (Made your Pumpkin Spice Cake as "muffins" and the kids love them, as they have all your versions of Vanilla Bean cake - Marble, Coffee Cake - so nice to make them happy AND healthy. Thanks!)
