Lovely new Blendtec Wildside & family video



Mock-Peanut Butter Ice Cream

based on the recipe in the Blendtec recipe book

Add to blender (this is my affiliate link) in this order:

1 cup coconut milk
1/2 cup SunButter
1/3 cup coconut sugar
1 tsp vanilla extract
1/2 of a ripe banana
4 cups (2 Freezer Trays With Lids) of frozen cashew milk cubes

Blend.

We used the ice cream button on our Blendtec, and there were a few bits of cashew milk cubes when it was finished, but we just ate around them. I think if we had used a full cup of coconut milk that wouldn't have happened, so that's what I'm suggesting above. It was completely delicious :-)

Note: If you are not using a Blendtec this ratio of cubes to liquids will probably not work.

Looks tasty. I bet I could just make something similar in my ice cream maker.

Oh my she is so good at that :) Yay Zoe! We have the wildside and it ROCKS. And, I just made this ice cream today with a few modifications too! I used almond butter and normal ice cubes. Plus I just had to add some raw cacao powder. We're peanut butter and chocolate people :) Enjoy your new toy.

Exactly, Kelly. The key to good ice-cream in any high-powered blender is the right ratios of soft (liquid) ingredients to hard (frozen) ones. A little more experience is all you need and your ice-creams will become perfect every time. Great video - your daughters are adorable.

My Blendtec is on the way! It arrived in the city I live in today but I am not supposed to get it until Tuesday. I can't wait! I wanted to let you know that your book (first one) is listed for 1,500 and some dollars on Amazon! :0 I wanted to purchase it along with some others but couldn't!! I KNOW it is a mistake. Oh my goodness Kelly, what a precious video! Don't loose that one :) You'll be playing that for years to come! She did so well, did you use prompter cards? Maybe we have a Food Network Star in the making ;) Congrats on the new blender :) Do you now put that ice cream into the freezer to harden, or is it soft serve?

Heather, SunButter is sunflower seed butter :-) It has a similar taste to peanut butter.

Anonymous, Yes, I always use canned coconut milk.

Meagan, It is soft serve, but you could freeze it. We froze some of ours :-)
