Simply Sugar & Gluten-Free, 180 Easy and Delicious Recipes You Can Make in 20 Minutes or Less

My friend Amy, author of the website Simply Sugar and Gluten-Free recently published her cookbook, Simply Sugar & Gluten Free, 180 Easy and Delicious Recipes You Can Make in 20 Minutes or Less. I couldn't wait to get my copy! When it arrived I sat down and didn't get up again until I had read the whole book. Don't you love books like that?

I was especially intrigued by the chapter on spreads and condiments, and socca (which I've never heard of and can't wait to try), but when I saw this whipped gelatin recipe I had to make it immediately. Well, twice actually. I made it twice in the first 24 hours I had Amy's cookbook. =)



This banana blueberry whipped gelatin, sweetened only with fruit, is irresistible. It took only a few minutes to make, and mine doubled in size in my Blendtec, so I didn't even have to use a handheld mixer after it began setting up. It went straight from my blender to some cute dishes, to the fridge, to my mouth =) And not that I don't like Jell-O, I do, but it wasn't the texture of Jell-O at all. It was fluffy and airy like I remember canned whipped cream.

And speaking of whipped cream, I topped each one with Amy's whipped coconut cream. It too could not have been easier or faster to make. I can't say enough good things about these two recipes!
