Sometimes you've just gotta eat a cupcake. Am I right? That was me this morning. Must-eat-cupcake-now :-) And what better way than a grain-free, protein and fiber packed cupcake? I topped Elana's vanilla cupcakes with a variation of this frosting, minus the orange peel, and with a little English Toffee liquid stevia. Elana also has excellent frostings in her new book. In the introduction she advises India Tree natural food coloring, and that's exactly how I colored this frosting. I even topped it with India Tree sprinkles. Zoe and Ashley were so excited :-)

Oh yes! This looks beautiful:) I'm excited about Elana's book too. I've yet to try baking with coconut flour, but I heard that it's really good!
Absolutely stunning, Kelly! I just keep looking at that photo. I'd like to grab it for breakfast! Like Elana's title says, it's irresistible. :-) I made a plainer Jane version in comparison--Elana's Marble Cupcakes--although I know you like Marble cakes, too. ;-) They were terrific. So glad that Elana created this cookbook ... it's wonderful!

I made Elana's vanilla cupcakes last week. They were muffin-like because I didn't frost them. They lasted two days in a household of two! I loved 'em!
