
A while back one of you said that you like tripling my waffle recipe so that you have waffles ready for the week to pop in the toaster. I thought this was a great idea, so I tried it myself and put a photo of a huge stack of waffles on the Spunky Coconut Facebook Page. They were great heated up in the toaster for days later.
Today I got a little lazy though, and tripled the batch, but only cooked four waffles for breakfast this morning. I put all the leftover batter in jars in the fridge, and tomorrow I'm thinking of using it for pancakes maybe.
The reason they are so golden brown is I added a tablespoon each of cinnamon and pumpkin pie spice. Keep in mind that was for a tripled batch. There are three teaspoons in a tablespoon (thank you Alton Brown ;-) so for one batch use a teaspoon of each.

Oh, Kelly, those look so good. I still need coconut flour to make your recipe. Got to get some, because these look so delish! May I ask why you tend to use pumpkin pie spice often and not pumpkin itself? Maybe you've stated before and I've forgotten.
Seeing that photo from your driveway is something else. I'm so glad the fire was finally put out and what a wonderful tribute to the firefighters! Their work is often so undervalued; I know they will be grateful for the show of support. :-)

Thanks Shirley! I just always have pumpkin pie spice on hand, and it doesn't change the recipe at all. If I added pumpkin I would have to change all the other ingredients, ya know? I don't actually think I could add it with the bean recipes :-) Hugs!

oh, this is on my to-do list. i'll be using duck eggs instead of chicken, and as soon as i get more coconut flour from tropical traditions i'll be making these! What sort of waffle maker do you use? I wonder if it's possible to find one without Teflon.
I made these for breakfast this morning. The flavor was awesome, but I could never get them to be crispy on the outside, only soft. I wonder if its my waffle maker, or is that the normal consistency?

Brenna, Mine is non-stick :-( Boo. I've seen antique ones that aren't but they're always rusty. A non non-stick waffle maker and ceramic bundt pans (I do have one of those!) are two things I would like to see produced again!

I'm purchasing a waffle maker just so I can try out this waffle recipe! My husband loves waffles and I haven't had them in SO long... can't wait! Speaking of breakfast, I just posted a FANTASTIC gluten, casein, and refined sugar free pancake recipe on my blog (www.lilbaristas.blogtspot.com). I think you will really enjoy it! (You and the girls, that is, because it does contain buckwheat. I recall reading something about your husband not liking buckwheat...:) Let me know what you think if you ever get a chance to test it out. I won my husbands family over with this one and they are on a fairly uncompromising SAD. :-)
Spunky Coconut, you are my hero! I am recently grain-free and am no cook. I just made these waffles and it was the most delicious thing I've eaten since going grain-free! I have already ordered your book and I can't wait for it to arrive! Thank you for sharing your talent and cooking skills with the rest of us.
