Stephanie at Purple Frog makes my
Coconut & Raw Cacao Pudding

Stephanie at Purple Frog, left a comment on my Coconut & Raw Cacao Pudding, saying, "I made it this weekend and it's delicious!!!" As always, this kind of comment just makes my day =D I love being connected to so many of you, getting to see your websites and know more about you. What an amazing sense of community we have. I feel so blessed.

She says, "It's chocolaty goodness it a bowl :) Though I had chia seeds on hand, this was my first time using it in something like this, and I can say, it won't be the last. This recipe is completely vegan, dairy free, gluten free (important for me, especially these days) and almost all raw." Thanks, Stephanie!

Kelly- YOU are so thoughtful to share your wonderful recipes and information with everyone, I am new to the gluten free community and I love your cookbook and blog, recipes too for that matter! I made the pudding last friday night and we were all EAGER with baited breathe to try it on Saturday morning, I figure if you could have it for breakfast so could we. I couldn't use coconut sugar, I had none, but I followed your recipe other than that, but I notice that Stephanies and mine, for that matter, aren't as lovely and smooth/solid as yours appears to be. Is it all in the blender? I have a basic kitchen aid one, nothing fancy. HElP!! LMK--it was Delicious!!!!! Dawn ;o)

Thanks Dawn!!! It might be the blender. You can also thicken by leaving out some of the liquids. So for this pudding you could try leaving out the water, and I bet it would turn out more solid. Hugs! Kelly

Oh, that looks so yummy. Still want to try it. Since Dawn mentioned she didn't use coconut sugar, maybe I'll try it with another sweetener, too.

The sense of community is unbelievable. I cherish it. You are a huge part of this community, Kelly. Hope you continue to feel better, dear!

Thanks again for sharing my post with your readers Kelly. It is such a delicious recipe. And like Dawn, I have just a basic blender and the "pudding" does not come out smooth, but it dosen't bother me too much since the texture reminds me of tapioca, which I always loved. Looking forward to trying more of your recipes!
