March Costco finds

Those of you who follow me on Twitter may already know that the girls and I have been sick. Zoe and I still are, but we are doing much better thanks to lots of rest and natural remedies. My husband has been great, getting take-out (he admits he can't cook), and helping out around the house, but I finally broke down and went grocery shopping yesterday. We were so low on food in the house.

Among other things, I was thrilled to find they still had the frozen organic cherries that I had heard were in, as well as several kinds of organic apples. I had them for breakfast this morning with bananas, walnuts (soaked first and dehydrated), and cashew milk. It's my "cereal" and also one of my favorite meals. Unfortunately, I still can't taste yet... bummer.

I also found these glass jugs for a great price. I've lost some over the years, and had been needing to replace them for a while now. Since I keep all my nuts, nut milks and nut meals in the fridge and freezer, I need quite a lot of these. Plus, as you may have heard me mention in another post, I'm working on another cookbook (yay!) so my food stock is higher than usual since I am testing new recipes all the time. Well, I haven't worked on any in over a week now, but the girls and I are on the road to recovery, and I'm sure the kitchen will be up and running again in a couple days. =D

What I like about these jugs though, besides the fact that they are glass, is the shape of them. They have flat sides so they take up less space and fit nicely together. It's kind of hard to tell from the photo, but the indentation for your hands to pick them up is really shallow—it doesn't go all the way through, like the handle on a mug. That way I can use them for solid foods like nuts and they wont get stuck.

I just made a Costco run today and picked up more frozen organic cherries. We're lovin' 'em.

The containers you got are great too. Have fun filling em up and emptying them out again. =)

I love those jugs! I used to have one kind of like that but my lid broke... I've been meaning to replace it, because it was so practical!

Hey Kelly, you are inspiring me to check out my local Costco :) I have held a grudge with them since I can't use my one and only credit card there -- have to get THEIR credit card, which I don't like.

I can't find frozen organic cherries our small town, but they are building a Costco, so I hope the cherries will be a regular thing.
I hope your cookbook comes out soon, because my husband is thinking about going to Bible School, so I won't have any money to buy cookbooks then!!!

Kelly, I don't go to Costco much anymore and now I'm not sure why. I think to me it's the world of processed foods but I love your great finds. I'm going today to see if mine has those pitchers. We could really use a new one here too. Those cherries look really good too. Thanks!

Dawn, Do you live here? We have a ton of GF places. Fan's in Niwot (who delivers), Sun Rose Cafe (Longmont), Le Peep (Longmont), Oskar Blues (the Longmont one), and some chains too: Chipotle, Outback, Pei Wei, Noodles & Company (the Pad Thai)... We bought the glass jugs at Costco when your videos inspired us to start making our own nut milk a few months ago! Actually, our 2 year old begs to make Almond Milk all the time now! She loves it and it is a sweet "job" she can help with!

We are a bit disappointed in the jugs from Costco, though, because the lids leak so much. The nut milk separates and needs to be shaken, and these jugs just don't seem to do the trick. Have you been happy with yours? Do we just have a bad set? Are we doing something wrong that our nut milk separates? How do you shake the milks so that they don't end up going everywhere? Another bummer is not being able to squeeze the nut milk bag directly in there because the opening is so narrow. (Not as big a deal to me though.) Are you happy with the jugs?

And, while I'm throwing a thousand questions out...lol...how long can you keep the almond pulp in the fridge for use in recipes? I'm trying to figure out how to get the amount of pulp needed for your recipes that require more, or for doubling the healthy, delicious cookies you came up with!

Oh, you're right, the openings on the Costco jugs are small for squeezing almond milk. I don't use mine for almond milk. I have one with a bigger opening for almond milk. I use them for dry nuts and seeds, because I buy them in bulk and keep them in the fridge an freezer. I know what you mean about the lids, so I put a little parchment paper under the lids to make them more air tight.

I would stir the nut milk with a big spoon, so you don't have to shake the jug. My milks don't separate unless I make a double batch and pour one on top of another. What kind of blender do you have? If it's not a double batch that might be whey they're separating.

I keep the wet almond meal in the fridge for up to 3 days, but you can freeze it too. I know a lot of people who do that.

Thank you for answering my myriad of questions! That is a perfect use for these jugs! I have been using mason jars for our almond flour, nuts, seeds, etc.

I think the type of blender IS the issue with why our milk separates now that you mention that...we have a junkie Oster...LOL I am dying to buy either a BlendTec or VitaMix (and I saw the awesome video you posted around holiday time to help with the choice). Our little allergy-girl (Sophia) has medical expenses over $4,000/mo right now-out of our pocket, so I will just dream of a new blender for a while...LOL Our poor little blender has to be beaten and shaken and stopped 1.2 million times when I'm doing ANYTHING with it. Pretty sad. LOL

You have no idea what HORRIBLE eaters we were before we found out about our toddler's allergies and (luckily) HAD to learn how to be healthy! I don't know what we would have done without your cookbook and website! What a blessing you are! No pressure, but hurry up with cookbook #2 please! :-)
