Egg-free, Grain-free Brownies, Part 2
gluten-free, vegan, dairy-free

I decided to celebrate my cold being over with some brownies for breakfast this morning =D Only, I haven't been tolerating eggs well lately (they are making me bloated and extremely tired), so I decided to revisit my Egg-free, Grain-free Brownies. They tasted great already, but I wanted to go ahead and make them vegan by simply trying them with coconut sugar rather than honey. I also decreased the amount of sweetener even more by using applesauce in place of water, and I substituted guar gum for xanthan gum.

They came out so yummy, I'm really excited about them. The texture is very similar, since I didn't make any drastic changes, and they are super scrumptious.

Vegan, Egg-free, Grain-free Brownies:

Whip with an electric mixer:
1/2 cup applesauce + 2 tbsp of water
1/4 tsp guar gum

Add to mixture:

1/2 tsp baking powder (Grain-free Baking Powder Recipe)
1/2 tsp baking soda
1 cup almond butter
1/4 tsp salt
1/4 tsp chocolate raspberry liquid stevia
1/4 cup coconut sugar
1/4 cup + 3 tbsp cocoa powder
1/4 cup dairy-free chocolate chips. (I use Enjoy Life. I like them because they're mini.)
1/4 cup walnut pieces

Beat with electric mixer.

Scoop into a square greased cake pan.
Spread it out with wet hands or a Spoonula (I just love saying that word, but if you don't know what a Spoonula is, click on it)

Bake at 325 degrees, for about 30 minutes.

I forgot to mention: Like the other variations—These are so good cold from the fridge! My favorite way to eat one!

Great minds think alike. I just posted a recipe for brownies this morning too, but I might not be able to eat mine anymore, since I am having issues with wheat right now and didn't know a good GF recipe to replace it. I'll definately try yours, looks delish!

I know what it is to become sensitive to eggs. In my case, besides the digestive disorders, I also noticed I had difficulty breathing and eggs made my pollen allergies worse.
It could simply be because of the feed. Try to get pasture fed eggs not vegetarian eggs (chickens are NOT vegetarian, they eat bugs & worms). Another solution, if you can find some (where I live farms are very rare) are duck, goose or quail eggs. I read they are better tolerated than chicken eggs but haven't had the opportunity to try myself ;(.
Other than that there are many possibilities for egg replacement (I like to do a combos of flaxmeal + water, bean puree, applesauce and/or buckwheat flour + water)

They look great, and I think I could actually have one of these on my anti-candida diet (but not sure about the coconut sugar?). These sound very much like a recipe I've been playing with(except mine have cashew butter in place of the almond--and no chips in mine (since no sugar, sniff boo hoo!). And I'm totally envious that you can get raspberry flavored stevia--mmm!!

Thanks for the info about spoonella's too! I discovered I do know what that is and I recently acquired one (For free even! :)) and love it! It is much better than just a regular spatula! :)

Thanks for the suggestions, Kelly. We don't have flavored stevias very readily available where I live (near Toronto) and ordering from the US amazon site is hugely expensive (shipping, exchange rates, etc.). Same goes for coconut sugar--I've never seen it here and am dying to try it. Guess I will have to substitute, or wait! ;)

my husband actually made these for me the other night and they were fabulous! i love the fudgey, rich texture... we've been buying the larger jars of almond butter from costco recently which lends itself well to your recipes :)

So...I'm on an anti-fungal diet and can't have sugar, and I'm not sure about coconut sugar. Just to be sure, how would I replace the coconut sugar? More stevia? (oh...can't have honey either)

I made these last night, and I was DELIGHTED. The texture is wonderful, and the taste is so rich. I've eaten half the pan already!

I omitted the stevia drops since I didn't have any on hand, and added about a tablespoon of extra cocoa powder and sweetener. Then I baked them for 24 minutes because I like them gooey, and because I always burn the goods whenever I use coconut flour. They turned out splendidly!! THANK YOU sincerely for sharing this recipe.

Can I use raw almond butter instead of roasted? Would it change the flavor? Would sunbutter be a better substitute?

Jenny, Any kind of almond butter will work, or Sunbutter (for a peanut-like taste). I just use the roasted kind of MaraNatha because I get it in bulk at Costco =)

I made these last night for my husband's birthday party. They were a huge hit, even among those who are not gluten-free and some who aren't too health-savvy either. I used raw almond butter and they still had a wonderful taste! Thanks!

Hi Kelly! I've been following your blog for a couple of months now. I've always been interested in organic and unrefined foods, but I started an anti-candida, gluten, egg (mostly), and dairy free diet a few months ago. Since then I've discovered so many blogs for alternative diets! Yours is one of my absolute favorites! I have to be very careful with my sugar intake, even unrefined sugars like coconut and agave. I'm working on a variation of your brownie recipe that has less sugar (I'm using agave). My husband is not a big fan of a strong stevia taste, so I'm trying to achieve a balance, leaning more toward stevia than agave... The texture of mine is still a bit dry. Any suggestions?

Oh and I meant to say that I am VERY interested in the Biociden. The link is indeed down and a quick google search didn't turn up the product you mentioned. Has Ashley had continued success with this product? I've been seeing a CRA specialist who recommended two products, Mozyme and Zymex. Have you heard of these? I've had pretty good results so far but am only a month and a half into the treatment process.

Great news, the "less sugar" brownie turned out amazing. I actually made two versions, the original (for my husband) and mine, in case it didn't turn out, but hooray it did! The stevia/agave blend was perfect and the texture was very moist and cakey!
I'm going to blog my changes today. Thanks for the inspiration!! :-D

I made my first batch of homemade peanut butter today. It was a total FAIL! That said, I used it to make this recipe (minus the raspberry stevia) and they were delicious! I really didn't want to waste all those peanuts. So, I ended up with a batch of brownies ... for breakfast:)

I just made these and they are awesome. I accidentally put in dbl the baking powder AND I didn't have guar so I used xanthan gum instead. This is my new fave brownie recipe! And a good way to use up my Costco bought almond butter!

THESE ARE PERFECT GRAIN-FREE VEGAN BROWNIES!! I made as stated but used agar powder rather than guar gum because that is what I had. Best alternative brownie I've found to suit my dietary choices. A million thanks!
