My mom was from the South until moving north to Maryland when she was a little older than Zoe is now. I think that's why we ate a lot of Southern food. At home we had biscuits with butter and jam, cheese biscuits, biscuits and gravy, strawberry shortcake with biscuits—any way you can think of eating a biscuit, we ate biscuits ;-) Zoe and Ashley have been gobbling up this version of egg-free biscuits. I like them a lot also, and I appreciate that they're low in carbs and high in protein. We put some hard goat cheese in ours (goat milk contains only trace amounts of the allergenic alpha S1 casein protein), but you can leave the goat cheese out and they will still be good.
Now that I've made a successful egg-free bean recipe I will see if I can apply it to my other bean recipes, like the vanilla bean cake and coffee (bean) cake. I can't even tell the difference between these egg-free biscuits and other biscuits with eggs. It would be so great to have the cake recipes both with and without eggs too :-)

Egg-free Biscuits:
Add to food processor:
1 & 3/4 cup white beans (I used navy)
1/2 cup applesauce
1 tsp guar gum
1.5 tbsp flax meal
1/4 cashew milk (or other milk substitute)
(How to Make Cashew Milk Video)1 tsp apple cider vinegar
1/4 tsp vanilla liquid stevia
1 tsp vanilla extract
2 tbsp honey or coconut sugar for vegan
1/4 tsp sea salt
1/4 cup ghee or coconut oil for vegan
Puree. Add:
1/2 cup tapioca or potato starch
1/2 cup buckwheat flour (you will need more flour if you live in the NW)
1 tsp baking soda
1.5 tsp baking powder (Grain-free Baking Powder Recipe)
Puree.
Optional: 1/4 cup chopped hard 100% goat milk cheese
Drop onto greased baking sheet in tall piles and bake at 350 degrees for 15 to 20 minutes.
I make about 10 biscuits and they take around 18 minutes in my oven.

Just 1 question though: do you need to melt the coconut oil/ghee, prior to pouring into the blender?

Thanks Alchemille! I used my food processor, and I didn't melt it because I knew it would be pureed into oblivion ;-) It certainly wouldn't hurt to melt it first though. Hugs!
Gosh, those look good, Kelly! I know this recipe will be a godsend to those who can't eat eggs.
I made your chicken meatballs last night and we loved them! Dipped them in a little honey barbecue sauce and had some coleslaw with them. Mine looked more like baked croquettes (not exactly meatball consistency due to amounts I used), but they were still lovely and delicious! Having leftovers tonight. :-)

I really enjoy your recipes, esp. the grain free ones (as I am grain free/semi paleo and free of various allergens...) I was wondering if you're thinking about putting out a *grain free* cookbook in the future? I just LOVE cookbooks, and would totally be interested in one... ;)
Also, do you have a recipe for dairy free, coconut milk caesar salad dressing? I feel like I read you do, but haven't found it online. (Maybe it's in your book??)

Thanks Lauren! I am working on a grain-free cookbook :-) I am also semi grain-free. I talked about it a little in my baking powder post. Yes, I do have a caesar dressing in my current cookbook, but I don't think it's on the website. I have a ranch dressing online that's really good though. Hugs!

My grandfather built Crofton :-) Then we moved to Annapolis when I was in junior high, and my husband and I lived there after college, before moving to Colorado. Do you go to Water to Go in Cape St Claire? They rock the healthy GF food. Tell Karen hi for me if you do ;-) Oh, and no, you totally can't taste the cooked white beans in the bean cakes. I can't stand bean flour either.

I'm loving all your egg free recipes! Is there a "trick" to making egg free goodies? Breads, etc? I make a lot of recipes from your site and from Elana's pantry, and eggs are frequently used. I may be going egg free soon and hope I won't have to give up the breads I've come to rely on.

Have you experimented at all with making biscuits or scones vegan, i.e., subbing out the ghee for an oil omitting the fat altogether (the sweetener is easy to change from honey)? I haven't checked your entire blog yet for an explanation for the choice of ghee over other fats, but perhaps you can save me some wasted experiments if you have found success or failure with different ingredients.... Thanks!

Hi Michele, I just made these with coconut oil and no goat cheese, and they were great that way. =) My husband is going to make them with rice flour in place of buckwheat because he doesn't like the flavor of buckwheat, and I bet that will be good too =)
i tried your vanilla bean cake recently, and it was amazing!! my father is really sceptical, and is super stubborn when it comes to "healthy" food, but i made him try a piece, and he tried as hard as he could to taste the beans, but he couldn't :) he didn't really like the dark chocolate frosting though, so i might have to work on a sweeter frosting if im serving it for guests. but i loved it!!!!!!!!!
i am going to try this recipe next. two questions- 1, can you substitute xanthan gum for the guar gum? and 2, do you think i could substitute the honey for stevia? i have a stevia substitution chart for regular sugar- is it the same for honey? thanks:)

I actually have been substituting guar gum for xanthan gum in everything and it's working great. I don't know about leaving out the stevia though. Let me know if it works out for you =)
I was confused - these don't look like biscuits, but then I remembered that we call biscuits "scones", and you call biscuits "cookies", so now I'm with it.
