

We have an Amazon credit card, which is great for getting points on Amazon.com. Usually I use the points to buy used books, but a few weeks ago I had enough points saved to buy myself a big treat -a stainless egg poacher. :-) I know I'm a goofball, but what can I say? I love perfectly poached eggs! Of course, anyone with a pot of water can poach eggs, which is exactly how I used to do it (with the help of some apple cider vinegar), but sometimes the whites would stick to the bottom of the pan, or the yoke would break in the water. Still, getting an egg poacher was a luxury. Some people shop for a nice dress now and then, some people like jewelry, when I get some credit I want to buy an egg poacher. :-)
Here's how I do it:
I fill the egg poaching pan with about an inch of water and put it over
high heat.

Meanwhile, I place the poaching parts on the counter, and put some coconut oil (or Ghee) in each cup, followed by one egg.
When the water begins to boil I lift the poaching parts and place them in the pan, cover with the lid, turn the heat to medium, and set the timer.
For eggs that look like these I let them steam for about 5 minutes.

I'm new to your blog and was wondering why you use coconut oil? I mean other than it seems like you like it a lot but does it have added benifits? :)

Hi Ann! I put a link to more info on coconut oil in this post. Coconut oil is almost half lauric acid. Lauric acid is only found in one other place -human milk. It is incredibly anti-bacterial and anti-viral. Plus it converts to energy rather than being stored as fat in the body, just to name a couple of cool things about coconut oil. Cheers! Kelly

Kelly - you are so funny! I'd like to buy one of those stainless steel pots that has a strainer so that you can just strain the pasta. Do you know what I mean? It's completely stainless steel.

I met one of my greatest friends by communicating how much i LOVE eggs. He called me up and said, "you are the only one in my entire CSA that has purchased the entire length of egg share...what are you going to do with all of these eggs"... WHY EAT THEM OF COURSE! If I had a few extra funds, I would be all over that new poacher... Here's to you and your love for a good poached egg. If I lived closer, I'm sure we would be great friends!!

I thought you should know that I cooked with coconut oil for the first time Saturday! I made hamburgers....as I stood in the Whole Foods Store surveying my many options of coconut oil...I read different ideas on each bottle and one said use instead of olive oil. I was like "what?!?!?!" but hey I gave it a try...and they were yummy! Not that they tasted any different but they sure were yummy. I cooked them on a low heat and well yeah, it was intersting. There is a mild flavor to the coconut oil (I am not admitting that I stuck my finger in and tasted it or anything...lol) but it was pleasant....So yeah...now I'm all about scouring your blog as well as others to find those yummy recipes! Thank you again!

Cool! You might really like my Chocolate Raspberry Cake/Cupcakes. They use 3/4 cup coconut oil, and also only 3/4 cups flour, although 1/4 of that is coconut flour, which doesn't really count ;-) So let me know if you make a baked good with coconut oil! I'm looking forward to that :-)
