Hi Everyone!

I wanted to update you on my coconut sugar research. In my last post our reader, Kelli, told us about this company, Azure, then a friend of mine called me the same day, and said that her co-op (Azure again), offers Organic Coconut Sugar --for SUCH A GOOD PRICE! This month it's on sale -5 pounds for about $20!

I put the link at the top so you can see if there's an Azure Stardard co-op already where you live, or so you can start one with your friends, etc. Those of you who live in CO can send me a private email if you want and I'll give you my friend's info. The pickup is in Longmont.

Can we just sub. equal parts coconut sugar for agave in your recipes?

was SO excited to find some this week at my local Whole Foods. It was $4.99 a lb, but I assume it will be worth EVERY PENNY! I am just trying to decide what to make first ;-)

As a lover of all things coconut, I'm so excited to see this posting! With this type of sugar in my hands, I'd definitely go wild with it: cereal, coffee, baking, etc.... thanx for the link! Do you know if palm sugar and coconut sugar are the same thing? Someone at the store told me it was but I wanted to check. Thanks!

Hi Kelly. Yes, coconut and palm sugar are the same. Just make sure that the coconut palm sugar is not mixed with cane sugar by checking ingredient list. Sweet Tree is a brand I also found at Whole Foods and it is coconut palm for sure, and about 4.29 /lb. I feel so good about using this product! www.Sweet-Tree.biz has more info.

Coconut sugar is a specific variety of palm sugar but not the other way around.

Coconut sugar comes from cocos nucifera while palm sugar may come from Nypa fruticans, Borassus Flabellifer, other palm trees, and of course cocos nucifera.

Oh my gosh! I'm super duper excited about the flour! I've never tried cooking with coconut flour!
