Those of you who follow my family journal blog know that we got a giant bag of oranges from our friend’s farm this week. They are so good. We’ve been eating them alone, making fresh orange juice, and I even made yet another orange pie. Then Heather had a great idea: make Chocolate Orange Mousse! When she suggested it to me last evening, I had already been soaking some cashews all day, so it was perfect. I threw the ingredients into the blender and chilled the mousse over night. It’s so good! I hope you try it!
Dairy-free Orange Chocolate Mousse
Add to blender:
1/2 cup cashews, soaked for at least 3 hours, and rinsed
1/2 cup fresh squeezed orange juice (from about 2 oranges)
1/2 cup coconut milk
1 tsp orange zest
1/2 cup coconut oil, liquified
1/4 cup honey
1 tbsp vanilla extract
3 tbsp cocoa powder
Puree very well. Chill at least 8 hours.
I used these small drink glasses, and it made 4 servings.
