mango salsa

Today we went for a really long bike ride, and stopped at the farmers market on the way for lunch. It was such a lovely spring day. Late this afternoon, when we got back, and the girls were playing outside with the neighborhood kids, I decided to make mango salsa. I could just eat this salsa with a spoon, but as a dip you could pair it with tortillas or sliced jicama. We put it on top of chicken and spinach tonight. 


Mango Salsa:
1 finely chopped sauteed onion
1 cup of finely chopped tomato
1 cup finely chopped mango
1 tbsp fresh chopped basil
1 tbsp extra virgin olive oil
1 tbsp balsamic vinegar
1/4 to 1/2 tsp Herbamare seasoning (to your taste)

That looks so yummy. I can't wait to try it! I love the recipe because it doesn't have chili peppers since I'm allergic to them. It would be good on a salad too!

Thanks! It's so easy, and it gets better as it marinades too, and the flavors all get happy together ;-)

I would love that on fish. There's a dish at UNO on their gf menu ... Mahi Mahi with mango salsa that I just love. Next time I buy Mahi, I'm making this salsa up at home. Thanks so much!
