waffle crust quiche

I had some leftover waffle fries one day, and I didn't want to waste them, so I left them sitting on the cookie sheet, while I thought about what to make for dinner that night. I saw frozen organic broccoli, and eggs, and instantly said to myself, "quiche." But I didn't have a crust, and didn't want to make one, so...

I greased the dishes and used the leftover waffle fries as "crust." Now I'm already thinking (having made this three times now) how I can take it one step farther. Next time I'm going to pulse the waffle fries in my food processor with some flour and an egg, and make a quick, more traditional looking, crust. 

But in the meantime, I also added defrosted broccoli.

...and Boulder sausage, cooked first, then chopped, as well as some goat cheese. (You can substitute with vegan cheese or leave this ingredient out if you need to.)

I used 4 eggs, 1 cup of coconut milk, and between 1/4 and 1/2 tsp Herbamare seasoning. 

Then baked them at 375 for about 40 minutes.

So good and so low budget :-)


Note: It is recognized that cow milk casein strongly resembles gluten on a molecular level. Goat milk, however, is very similar to human milk, and contains only trace amounts of an allergenic casein protein, alpha-S1, found in cow's milk. Although many of us find goat and/or sheep milk to be well tolerated and easier to digest, it does not work for everyone.

A beautiful quiche, Kelly! Love the improvised potato crust. Improvisation is the best part of cooking I think. :-) I've heard of folks making a crust from grated potatoes, so yours is along those lines. I always make my quiches crustless by adding 1/4 cup of GF flour to the recipe (and substituting GF flour for any flour that's already called for). I also know folks who do rice crusts.

We have friends who have goats and I so love their cheese and yogurt. I didn't kow the part about goat's milk being very similar to human milk--that's terrific (not sure what it says about us humans though LOL). I am trying to eat pretty dairy free these days myself. Gluten and dairy both have that opioid effect, too. Not good.

Potatoes ... so economical. I made ultimate oven fries last night. Oh my. So good. I'll be posting on those soon. :-)

Hey Kelly,

Yum! Quiche is often our "leftover meal", a mish mash of whatever I have. I've always used Garlic Mashed Potatoes for my quiche crusts. I've not used coconut milk though, I'll need to remember to turn to that more often!

Quiche is sounding pretty good!

Okay, that looks so good (minus the sausage for me) that it's making me hungry and I am eating lunch while catching up on your posts. BTW- my code word verification for this post is Comer (spanish "to eat") how funy.
