

I'm going to keep using the brown rice tortillas for pizzas, but I think for a wrap I'm switching to rice paper. Love them! The past two days we've been making these cute veggie spring rolls with the rice paper, and having so much fun. The girls take their positions at the kitchen island and enjoy dropping the rice paper into the warm water. We wait several seconds, then I lift them out and we start to assemble. Mostly Zoe assembles, and Ashley eats the carrots and cabbage off the cutting board :-)
The trick is to wrap them as tightly as you can, and keep all the ingredients long. The first time we made them I finely chopped the lettuce and the carrots, so as we ate they fell out. Live and learn :-)
I've been dipping the rolls, but I think from now on I'm going to pour my sauce in before rolling it up. This sauce (above) that I made today was:
1 tsp tamari sauce
1 tbs almond butter
2 tbs sesame oil
2 tsp Vegenaise grapeseed oil
and a pinch of garlic powder
I just dropped all of the above ingredients into a glass jar (which came from buying jam and now is reused over and over), screwed the lid on tight, and gave it a good shaking.
Next I think I'm going to make some bean burritos with these rice papers and see how they turn out.

I love your photo of the fresh ingredients. Looks SO good. And what a great idea for little kitchen helpers! Perfect for assembling in your own way. I haven't used rice paper all that often, but think I better rethink them. This looks awesome and I like the idea of your sauce recipe. I might try a red chile dipping sauce as well.

The sauce looks yummy! Would these hold up to make for a lunch on the go? We make "sandwiches" using lettuce instead of bread or tortillas but they aren't always filling enough for the kids.

Thanks Cathy! They should hold up fine on the go. I would suggest a tiny bit of water under them or some wax paper maybe, so they don't get totally stuck :-)

We have a great Vietnamese restaurant down here where we go and I always get these rolls and have been meaning to make them at home. Problem is, I never like any of the sauces, but I am going to try yours right away. They put rice noodles in them too.
Good idea on the burritos. I have a hard time with the brown rice tortillas because they are either chewy if you steam or microwave them and too hard and crunchy if I fry them. It bothers my TMJ. I am going to try this soon.

The brown rice tortillas are very problematic as wraps. These are going to be my new wraps. So much easier!
If you don't care for this sauce I have another one you might like - Ashley's favorite. She'll eat anything with it on it!

Wow, what a gorgeous presentation! These would be fun to have for a little assembly line for one of our support group meetings. We could have a variety of fresh fillings and fun sauces (like yours--yum!). I will have to ask one of the members who lives near Whole Foods or Trader Joe's to pick up the rice paper for us. I love these, aren't they great? We have been eating them lately as well. My mom created a really amazing sauce. I plan to post it on my blog at some point. We usually fill the rolls with rice noodles and vegetables, but we've also used rice and vegetables. I love to use avocado :)

Yummy! I added a pinch of red pepper and a bit of coconut milk to make the sauce creamier.
