My theme for February is Sweets for your Sweetheart. Valentine's Day is what comes to my mind when I think of February. And although most of us think of our significant other as our "sweetheart," Valentine's Day is for anyone you love. It could be a child, or a grandchild, a neighbor or a friend. Maybe you know someone who would really appreciate you showing them that you care.
I remember one Valentine's Day when I was young. My friend, Paul, came to sit by me at lunch. He opened his bag and began to take out his food. Everything his mom had packed him in his lunch was red. She gave him strawberries I remember, and a clear little bag of red M&M's, that looked as though they had been separated from the other colors by hand. There was also a red bow and a card. Paul must have felt pretty good about that, and I did too, just admiring it.
I don't know who I'm going to give this Chocolate Brownie Ice Cream to yet, but I think they're going to love it. It's chocolate and creamy, and there are chunks of chewy brownie bits in every bite. I know it's cold outside, but I will always remember the very first time I came to Colorado, ten years ago. It was covered in a ton of snow, and I was at my girlfriend's place in Denver. We curled up on her couch with about 3 pints of Ben&Jerry's and dug in! This may have even been one of those flavors!

Chocolate Brownie Ice Cream:
Dissolve 1 tbs gelatin into ¼ cup boiling water and set aside/Or substitute with ½ tsp xanthan gum.Add to blender:
1/2 cup hemp milk
2 cups almond milk
1/4 cup honey or agave
2.5 tbs cocoa powder
Add gelatin just before blending.
Puree. Add to ice cream machine. .

When it's almost ready add a cup of crumbled Flourless Brownies.

Looks yummy! They don't sell hemp seeds here in Israel:-( so can't make any hemp milk. Last summer when I went to Finland brought back some hemp seeds and made hemp milk;will have to wait till I go back there again and get hold of some more hemp seeds.

Loved the story about your friend's special Valentine's Day. I remember one Valentine's Day, my son and I made homemade mints for all the family and made "pocket" heart containers to hold them out of construction paper, lace, and yarn. Everyone loved that gift.
Hmmm, I hope I have time to participate. I will be making lots of sweets for our big party on Valentine's Day though and I did plan to blog on some of those, so why not? Fun.

I looked online to see if I could find the pattern we used so long ago. Instead I found this video on how to kirigami a heart pocket.

That video is awesome! We made those at Christmas, they're Scandinavian! People hang them on the tree in red and white, like the Danish flag. But I sure could have used that video in December! LOL Man, did we have a tough time figuring it out from the book!
We are totally going to make them for Valentines with pink and red paper! I'll see if I can get some little flowers to put inside and maybe we will go around the neighborhood, giving them out :-) Thank you so much! I'm sure lots of others will enjoy that as well!

Do you know what it is in this recipe that results in a creamy ice cream? I've been trying to make ice cream with almond milk recently, and the results have been closer to ice than cream. The last batch used 8 eggs and 1 tsp gelatin, which was closer... I use Truvia to try to keep it low carb... I wonder if that's it?
I thought it might be lack of fat that makes it more like ice, but your recipe here would have less fat than mine, since you don't use all the eggs.
