
It's Monday, which means it's time again for Gluten-free Products, Spotlight Holiday Edition!
People often ask me for a recommendation for good gluten-free bagels, and there are two that I know of: Outside the Breadbox in Colorado, and Francis Simon Bakery in Texas. I believe that OTB is a completely gluten-free facility, whereas FSB does use wheat and gluten. Above is a picture of a blueberry bagel from OTB, toasted with ghee and a sprinkle of xylitol.
The bagels from both of these bakeries are really good toasted. There is some kind of magic that happens to them when you toast them. I don't know why. We'd have to consult Alton Brown :-) They are not as amazing as bagels made with wheat, but they are a close second, and they are way better than some of the other gluten-free ones out there.
The tea above is another gluten-free Celestial Seasonings that I found. Like I said before, several of them contain barley, but this one doesn't. It's called: Candy Cane Lane and it's so good.

Matt got me the blueberry ones from outside the breadbox and they were good. I didn't get them before because I thought they had eggs, but they don't!
Are you going to make a gingerbread house?

We did get the ingredients for the gf gingerbread house, but we haven't decided when to make it yet :-)

Just wanted to let you know I made your banana bread yesterday. The inside was a little gooey, but that is likely do to my fairly unpredictable oven... Still made for a delicious breakfast this morning! Thanks so much for the recommendation!
Also, a few posts ago you mentioned making chocolate chip cookies. Do you have your recipe posted somewhere? I couldn't find it.
By the way, Candy Cane Lane is my absolute favorite! I've already purchased multiple boxes this season!

I am trying to figure out what to make for Matt's parents while they are visiting. I want to make one of my chocolate avocado pies with a seed crust. But I don't want to make too many sweet things, because Matt's mom is diabetic. Since they are flying in on Christmas, we are going to have lunch ready for them. But I still haven't decided on what exactly. Their diet is a lot different than ours...

Sorry it was a little gooey. I try to check my breads with a clean knife inserted into the center to see if they're done, when I can remember :-) I've also heard to use a toothpick, but I've never done it that way.
The chocolate chip cookies that the kids made were a gluten-free mix. There are so many, and I've never tried one that I didn't like, so once in a long while we splurge. I think we make them like twice a year. It would be a good idea to make my own though, so I can substitute with agave/honey/xylitol/stevia. But I think the last one we used was made with evaporated cane juice, which I don't believe is depleted like refined sugar. Right?

They will love your chocolate avocado pie! It's so good! Just don't tell them what's in it - trust me, I have experience with normos (typical eaters) ;-) My Dad was like that. He happily gobbled up all my weird food and I just played it cool as if it was nothing unusual!
As far as the rest I would make whatever you guys want. You have good taste! I'm doing the Scandinavian thing again this year - sweedish meatballs, lingonberry sauce, Jansen's Temptation (minus the fish). And I'm going to add a couple of my own things too, like the green bean casserole, and my pecan pie. I actually just made it and I think I'm just going to slice it and freeze half now :-)
We tried the Candy Cane Lane also. It is yummy.
