Chocolate Raspberry Cake





Sometimes I make baked goods just because we have nothing else to eat in the house :-) Today I opened the fridge and saw nuts, leftover soup (which I was saving for dinner), and less than a dozen eggs. That was about it. I don't know about you, but I like to see how long I can go without buying groceries - heehee! So we made my chocolate raspberry cake and had it with tea for a snack this afternoon. There is never any shortage of tea in this house!

It's the exact same recipe as the cupcakes, but baked in a spring form pan for about 34 minutes and topped with some icing I whipped together. The raspberry flavor is very faint, but you could substitute with another one of the flavored liquid stevias if you like. I'm going to try Root Beer or English Toffee next time I think. 

Both the cake and the icing were so good. My husband said it was the best thing I've ever made - ever! Then I asked why he was kissing up to me, what did he want? He shook his head, laughed and said, "I just call it like I see it." My Mom is also here, visiting, and she was impressed by how little flour there was in the cake. She just found out that she is celiac too. It's genetic, so I knew at least one of my parents must have it, to pass it on to me. 

But with cake this crazy good, who needs gluten anysway?

No one would ever believe this cake was gluten-free. It's better than any cake I ever ate, "when I was wheat," as Zoe would say!

For the icing I pureed:
1/2 cup cashews, soaked for a few hours, rinsed and strained
1/2 cup agave
1 tbs coconut oil
1 tsp vanilla 
2/3 cup shredded coconut

Warning: the recipes there are not anywhere near as healthy as yours ... not yet anyway. They are more mainstream ones that are naturally GF or can easily be made GF. I do expect there will be some you'll appreciate in the near future though, and hopefully you'll enjoy upcoming discussions. Your blog has helped to inspire me to be willing to just get it launched and out there. :-)

Love this post! You always have the most attractive desserts and photos. Adore the little elf/gnome guys. ;-) And, a chocolate raspberry cake on an aqua-colored polka dot plate ... gorgeous! Sadly, after trying coconut oil for the last couple of weeks, I've found out I have an intolerance to it. :-( At least, I tried it before buying a huge container. Such a shame because I really enjoyed cooking with it and eating it.

Glad your mom got a diagnosis. I know that sounds odd, but I am like you ... I don't believe anyone really needs gluten. This way she can eat GF and save herself from so many symptoms and illnesses down the road. I look forward to hearing about how much better she feels in the near future! Another diagnosed celiac ... I really want to see that 97% undiagnosed statistic go down, down, down!

Did you know I grew up in PG county? That's in MD, near DC. Then we moved to Annapolis when I was a teenager, and after college, Andrew and I lived in Silver Spring. We were right downtown.

We are just across the Potomac River from MD in King George, VA. Sure I know where PG county is and Annapolis is one of our favorite spots. We try to go to the sailboat show in October every few years. :-) The company I work for now was actually based in Rockville before it was bought out (and I used to travel there for lots of meetings), so not too far from where you were in Silver Spring. It really is a small world!

We just made these cupcakes (with the icing) for my birthday!

Thank you! We loved them! What delicious textures and taste.

The boys liked them -- my youngest (2) the most. He LOVES chocolate.

Here are my variations, due to short supply!

-I used under 1/2 cup of agave in the frosting and it still had a nice, sharp sweetness.

-I also used just over 1/2 cup of agave in the cake and also omitted the stevia. They didn't have the chocolate raspberry at my store. I did have vanilla creme flavor in the fridge but decided to leave it out.

-I meant to use egg replacer (I just found out I am reacting to eggs) but I was auto-pilot and used the real thing!
