Corn Veggie Wraps

Usually I am not a fan of gluten-free corn products, but I was really in the mood to make veggie wraps, and the gluten-free brown rice tortillas I always buy have sadly been no where to be found lately. Either I keep catching them on days when they have run out, or they don't carry them at my new health food stores. Then, yesterday, I saw the same brand, Food for Life, makes organic sprouted whole kernel corn tortillas. "What are these?" I wondered, picking up the package. They don't use corn meal or corn flour, perhaps this raw-like approach to corn might not hurt my stomach, like most of them do. So I tried them last night, and again today, and I can safely say they taste great, and I feel fine. Yay!

I heated them in a dry pre-heated pan, then topped them sparingly with spinach, sprouts, tomatoes, avocado, carrots, pickles, etc. Use your favorites. To dip the lovely little guys, I mixed up some honey mustard dressing with my hand mixer. 

Honey Dijon Dressing:
1/4 cup extra virgin olive oil
2 tsp honey
2 tsp dijon mustard

Hi there, just ran across your blog. I'm noticing that corn tortilla chips KILL my stomach whenever I eat them. Started a little over a year ago. Chips and queso used to be one of my major food groups until I started getting sever stomach cramps after eating them. I thought it was the spicy foods that were doing it. Thought I had an ulcer. But now I'm noticing it's just the corn tortilla chips. I can eat other chips like ruffles, but doritos KILL me! You seem to have the same symptoms from what I can tell. Can you tell me a little about this? If it's not an ulcer what is it? Any help or info would be greatly appreciated!

I believe corn products hurt my stomach because they are hard to digest. Corn products also make my 6 year old terribly bloated, so she doesn't really eat them either. When one of us does have a little bit of packaged food with corn in it, we take lots of digestive enzymes, and that helps. Still we avoided it for the most part.

These tortillas sound like they are processed less, which I'm guessing is why they didn't bother me. Raw corn doesn't give me any problems.
